Happy Friday peeps! Life has been a bit of a whirlwind lately. With teaching classes and full marathon training my house looks like a bomb exploded in it. After 4 weeks I feel like I’m starting to get into a groove and get some normalcy back. My menu planning and food prepping has really helped during the last 2 weeks.
I’m so excited about all of the warm weather we are having and can’t wait to spend the weekend outside with the boys. It’s crazy that just last weekend I was running in a few inches of fresh snow and now almost all of the snow has melted. It’s gonna be a fabulous long run tomorrow.
With life being crazy and all, every time I sit down to write a post something else comes up and my writing gets put off. I have really missed sharing some of my favorite recipes with you all. Today I have a great high protein banana muffin, it has just the right amount of sweetness to help cure that after dinner craving. They were a big hit with my boys as their after school snack.
Mini Protein Banana Muffins:
Ingredients:
Makes 48 mini muffins
- 2 over ripe bananas
- 1 cup plain greek yogurt
- 2 cups oats
- ½ cup unsweetened applesauce
- 2 eggs
- 1 scoop of vanilla protein powder (I use Vega)
- 1 tsp cinnamon
- ½ tsp baking soda
- ½ tsp baking powder
- 2 tsp chia seeds
- 2 tsp flaxseeds
- ½ cup chocolate chips
Directions:
- Preheat oven at 350F
- Place all the ingredients minus the chocolate chips in blender.
- Blend until smooth.
- Spray 2 mini muffin tin with non stick coconut oil spray.
- Fill muffin tin and sprinkle 3 chocolate chips on each muffin.
- Bake for 12-15 minutes.
