It’s the weekend!! What’s even better about this weekend is we have no kids. Chase and Ashton are off to Falcon Lake with Chad’s parents and my parents are taking Hudson out to Great Woods campground. They are spending some quality time with their grandparents while Chad and I get a nice little break. It’s also our 9 year wedding anniversary next week so we will celebrate Saturday and have a date night, perhaps dinner and drinks.
Seeing how we don’t have any kids I decided last minute to sign up for a fitness theory course. I’m pretty pumped but extremely nervous. I’m thrilled to be learning and growing in the health and fitness industry so I can start helping women become better versions of themselves. Unfortunately I’m not what the world would call the “best student’. I’m the talkative one that they refer to as “chatty Cathy”. My grade 12 math teacher told me once that “I should get a job where I could talk all day”. Good thing my kids don’t tell me to stop talking. ;P It wasn’t very nice but I guess it was accurate. I wouldn’t get very far sitting alone at a desk all day having no one to talk to. I would go a bit nutty. That’s why I love chatting with all of you.
This week has been hot here and we love barbecuing when it’s hot out. We eat dinner on the deck and enjoy the short summers we have. Yesterday Chad grilled up some veggies and sausages for dinner. We also cooked some corn on the side stove top. This way we can play outside while everything is cooking and play with the kids. Win/Win
I’m all for easy healthy recipes that don’t take more then 30 minutes. If you’re like me and have growing boys you understand they don’t like waiting for their food to cook. I asked Chase one time “When are you not hungry” His response “When I’m sleeping”. I can’t even image what his teenage years are going to look like and how much food I’ll have to cook then. They have little bellies but boy can they eat.
Here is one of our favorite recipes for the BBQ.
Easy Grilled Vegetables:
- 1 zucchini sliced 1 inch thick
- 1 cup broccoli florets
- 1 red bell pepper chopped
- 1/2 cup of cherry tomatoes
- 1/2 red onion chopped
- 1 tbsp olive oil
- 1 tbsp seasoning of choice (I used a vegetable seasoning)
- Start barbecue at medium heat.
- Pour olive oil and seasoning in a small bowl and whisk. Set aside
- Place all the vegetables in a dish and drizzle with olive oil mixture.
- Pour vegetables into a grilling dish.
- Place on top rack in grill for 10-15 minutes or until veggies are golden brown
